Blueberry Bliss Cookies

A tray of golden sugar cookies, topped with a vibrant dollop of blueberry jam. As the cookies bake, the blueberry jam melds with the cookie, transforming it into a heavenly blueberry-infused delight. It's a cookie metamorphosis that will leave you craving more.



Ingredients

1 c unsalted butter, softened

1 c granulated sugar

1 large egg

2 tsp vanilla extract

2 3/4 c all-purpose flour

1/2 tsp baking powder

1/4 tsp salt



Instructions

Preheat your oven to 350°F and line a baking sheet with parchment paper.


In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract to the bowl, and mix until well combined.


In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.


Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.


Use your thumb or the back of a spoon to make a small indentation in the center of each cookie. Spoon about 1/2 teaspoon of blueberry jam into each center, making sure it doesn’t overflow.


Bake the cookies in the preheated oven for 12-15 minutes, or until the edges turn golden brown. Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
