ingredients
4 cod or pollock fillets
1 tsp paprika
2 tsp onion powder
2 tsp ground coriander
1 ½ tsp ground cumin
¼ tsp ground allspice
¼ tsp cayenne
1 tsp red chili flakes
2 tsp fresh chopped thyme
3 tbs olive oil
4 cloves garlic, grated
1 c tomatoes, chopped
¼ c tomato paste
1 -¼ c vegetable or chicken broth
¼ tsp sugar
1 ¼ tsp salt
1 tsp black pepper
zest of one lemon
1/4 c cilantro, chopped
instructions
combine paprika, coriander, onion, cumin, allspice, thyme, chili flakes and cayenne in a small bowl.
heat oil in a large skillet over medium high. add seasoning mixture and garlic, cook together until fragrant, about two mins. add chopped tomatoes and cook for another two minutes.
add tomato paste, stirring for about 3 minute or until thickened.
stir, vegetable broth, sugar, salt, and pepper; cover and bring to a simmer over medium-high heat, stirring occasionally.
when the tomato sauce is ready, carefully nestle fish in sauce and return to a simmer.
reduce heat to medium low
and continue to cook covered until the fish is cooked through, about 8 to 10 minutes.
top with lemon zest and cilantro, serve over herbed rice pilaf or couscous and enjoyed. ☺️
