chicken & waffles with a butter pecan syrup

fall is in the air and these chicken 🍗 and waffles 🧇 are screaming eat me! perfect fluffy waffles with crispy crunchy fried chicken and a butter pecan syrup thats to die for 🤤.



serving | 6

chicken:

2 lbs boneless skinless chicken tenders

1 ½ c all purpose flour

6 tbs cajun seasoning

1 1/2 tbs crystal hot sauce

½ tsp onion powder

½ tsp garlic powder

1/4 tsp allspice

1/2 tsp cumin powder

1/2 tsp cayenne pepper

2-3 eggs

1 tbs water

oil for frying


instructions


in a bowl, season chicken with 3 tablespoons of cajun seasoning and hot sauce. set aside.


in another bowl, mix  the flour with the remaining seasoning, set aside. 

in a third  bowl, beat the eggs and water. set aside. 


dip one chicken tender at a time into the flour then the eggs, and then back into the flour, pressing to coat the chicken well. repeat with the remaining tenders.


in a large cast iron skillet heat to medium-high and let oil reach a 375° fry until for 6 to 7 minutes on each side or until golden brown and the internal temperature has reached at least 165°.

 


butter pecan syrup:

1½ c pure maple syrup

4 tbs unsalted butter

3 tbs brown sugar

½ c pecans toasted and coarsely chopped

big pinch of  kosher salt

1/2 tsp vanilla extract


instructions


in a pan of medium heat, add butter, sugar, maple syrup, pecans and salt. bring to a simmer until slightly thickened, about 5-6 minutes. allow to cool slightly, and add vanilla.


waffles:

2 c all-purpose flour

1 3/4 c milk

2 eggs

1/2 c butter, melted

1 tbs sugar

4 tsp baking powder

1 tsp vanilla extract

1/2 tsp almond extract | optional

1/4 tsp salt


instructions


preheat your waffle iron and spray with cooking spray or rub a little melted butter on.


mix together flour, sugar, baking powder and salt.


in another bowl, beat the eggs until light and fluffy then a add vanilla and almond extract, butter and milk.


next, combine the wet ingredients into dry ingredients and mix until just smooth. let batter sit for about 5 minutes before adding to the waffle iron. cook until golden brown.


serve warm, drizzle with butter pecan syrup and enjoy ☺️.
