hi friends ☺️ i want to share some of my go-to easy recipes. when i’m super busy with clients and events, i don’t have much time to think about cooking for myself nor do i want to. i normally always have chorizo in my kitchen, so this recipe is my #1 go-to meal. it’s creamy and salty with a little kick of heat and only takes about 20 minutes to make. plus, who doesn’t love a bowl of pasta 🍝.

ingredients
1 box of pasta | your choice, I’m using bucatini |
1 c beef chorizo, squeezed out of the skins
1 tsp garlic powder
1 tsp onion powder
1/2 tsp red pepper flakes
1 small bunch fresh parsley
3/4 c ricotta
2 tbs olive oil
instructions
make pasta according to the pack instructions. drain, reserving a 1/2 cup of pasta water.
in heat a large frying pan over a medium-high heat add seasonings and chorizo, breaking up the meat as you go. about 8 minutes until crispy.
add drained pasta and 1/4 cup of pasta water to the chorizo pan and deglaze. you can add little more water if needed to loosen the sauce.
remove from the heat, mix and toss the pasta so it’s fully coated.
add two large dollop of ricotta and half the parsley. drizzle with a little oil and gently fold the pasta together.
top with remaining parsley 🌿 and serve.
