if you’re looking for something new to do with your chicken wings, you’ve found it. these vietnamese inspired wings are perfectly crispy and packed with tons of flavor.
the umami from the fish sauce, the heat from the chilies and the freshness of lime juice, creates a symphony of flavors in the perfect bite.
ingredients
chicken wings
2 lb chicken wings
2 tbs white pepper
3 tbs kosher salt
2 tsp chicken bouillon powder
2 tbs garlic powder
2 tbs onion powder
1½ c cornstarch
1/4 c flour
1 tsp baking powder
vegetable oil, for deep-frying
vietnamese wing sauce
3 tbs fish sauce
1 tsp garlic powder
1 tsp ground white pepper
3 tbs cilantro, finely chopped
1½ tsp sugar
2 tbs lime juice
4 mixed chillies, chopped
instructions
wash and pat chicken wings dry.
add salt, white pepper, bouillon powder, garlic and onion to the chicken and mix thoroughly. allow to marinate for at least 30mins
while the wings are marinating, add all ingredients for the wing sauce in a small saucepan over high heat.
bring to a simmer and cook for 2-3 minutes, once the sugar has dissolved set aside to cool.
fill a saucepan or wok with the vegetable oil over high heat. allow the oil’s temperature to reach 350°, you don’t want to over heat the oil because the chicken needs time to cook without burning.
while the oil is heating, mix the corn starch, flour and the baking powder in a large bowl. coat each chicken wing in the corn starch mixture, tapping off any excess mixture.
fry chicken for 10-12 minutes or until golden.
before serving, toss the chicken wings in the sweet and tangy sauce, garnish with cilantro and chopped chilies. serve immediately and enjoy ☺️
