Ready to spice up your Valentine’s Day with a dash of romance? These fire-roasted oysters are here to steal the show. Imagine fresh, buttery goodness mingled with a white wine magic that’ll have your taste buds dancing. This adorable recipe is easy-peasy, so get ready to impress your special someone!



Ingredients


Shucked Atlantic oysters (Blue Point or Wellfleet)


White Wine Compound Butter

1 stick unsalted butter, room temperature

2 cloves mashed garlic

1 1/2 tbs dry white wine

1/2 tbs chopped thyme

1 tbs chopped parsley

1 tsp lemon zest

2 tsp kosher salt

1 tsp red pepper flakes (optional)


Instructions


Compound Butter

Combine all ingredients in a small bowl using a fork or mixer. Add a teaspoon of butter to each shucked oyster, reserving some for post-grilling or for pasta.



Roasting Oysters**


the fire pit or grill to 475°F.

Prepare a sheet pan with crumbled aluminum foil to keep the oysters in place. Place shucked oysters on the sheet pan, gently pressing them down.

Spoon a heaping teaspoon of compound butter into each oyster.


Grill over direct heat for 4-6 minutes until the butter bubbles, and the edges of the oyster flesh brown slightly. Carefully remove from the heat with tongs; the oysters will be very hot.


Garnish with additional parsley and serve warm in the half shell over a bed of salt or buttered pasta.




Notes


Atlantic oysters, such as Blue Point and Wellfleet, with larger shells are ideal for roasting.


For oven-roasted oysters, bake at 375°F for 10-12 minutes or broil for 1 minute.
