honey roasted peaches and porridge is probably my favorite fall breakfast. the peaches 🍑 are filled with such rich simple flavors... and the aroma of roasting peaches is heavenly.
with a kick of warmth from the cinnamon and cardamom, it just pairs perfectly with sweet, creamy corn meal porridge 🤤.

honey roast peaches
3 ripe peaches
5 tbs honey
1 tsp salt
1 tbs butter
squeeze of lemon juice about
1 tsp ground cinnamon
1 tsp ground cardamom
1/4 tsp ground nutmeg
porridge
1c corn meal
2c almond milk (or milk of your choice)
2c water
1 tsp vanilla
1/2c sweetened condensed milk
1 cinnamon stick
garnish
honey
chopped nuts
ground cinnamon

instructions
heat the oven to 350, halve and core the peaches and place cut side up in a small roasting dish, in a small bowl, whisk together honey, vanilla, cinnamon, cardamom , nut and salt.
spoon the honey syrup on top of the peaches, making sure they all get coated.
roast for about 20 minutes until softened, basting occasionally with the roasting juice.
meanwhile, combine almond milk, condensed milk, water, cinnamon stick and vanilla in a saucepan; cook over a low heat for 5-8mins. add in corn meal, stirring often until the porridge has thickened.
to serve, top the porridge with roasted peaches and a little of the roasting syrup, a drizzle of honey, a handful of chopped nuts and a pinch of cinnamon and enjoy ☺️.
