salmon has a chokehold on me and this sambal honey glazed salmon is my latest recipe obsession. sambal is one of my top three favorite sauces. and when i remember i had fermented garlic honey in my cabine, the rest was history.

| ingredients |
salmon:
1 ¼ lbs salmon fillet wild and fresh
glaze:
¼ c garlic honey***
¼ c olive oil
2 tbs soy sauce
1 tbs rice wine vinegar
2 tsp sambal sauce** 3 clove garlic crushed 3 tbs sesame oil for cooking
** you can always swap the sambal sauce for sriracha hot sauce.
*** any honey you have will work

cut salmon fillet into four 5 oz. portions.
in a bowl combine honey, olive oil, soy sauce, vinegar, garlic, ginger and sambal sauce. mix until smooth.
place salmon fillets in a gallon-sized ziploc bag and add 2/3 of the marinade. Reserve the remaining 1/3 of the marinade for glazing salmon at the end. marinate salmon for 15-30 minutes (overnight best).
in a large pan or skillet, on medium heat add just enough sesame oil to lightly coat the bottom of the pan.
when the pan is ready, cook salmon flesh side down, for 3-4 minutes.
flip salmon and continue cooking for an additional 3-4 minutes, or until salmon flakes easily with a fork or the internal temperature reaches 145 degrees.
pour remaining glaze over salmon and serve over rice, garnish with cilantro.
