the weekend is here, and i’m ready to relax by the pool, catch some rays and eat.
the farmers market had beautiful tomatoes and i’ve been craving mozzarella, so obviously caprese salad has to be made. caprese is the best way to eat mozzarella cheese, don’t argue with me.
there’s something about fresh tomatoes with soft mozzarella cheese and basil that makes me heart warm and mouth water.
this 15 minute caprese salad recipe , will be the highlight of your weekend and it taste like summer.

ingredients
1 pint cherry tomatoes , sliced in half
3 tbs garlic oil | olive oil
4 tbs balsamic vinegar
1/2 tsp salt
1/2 tsp pepper
1/4 tsp dried oregano
1/4 tsp dried thyme
1/4 c basil | ribbon cut
1 c mozzarella balls
instructions
in a large bowl combine tomatoes 🍅 , mozzarella balls and basil 🌿, set aside.
in a smaller bowl, whisk together the garlic 🧄 oil, balsamic vinegar, salt 🧂 , pepper and dried oregano and thyme.
pour dressing over the tomato mixture and toss. refrigerate until ready to serve or let marinate overnight.
before serving, add more basil, salt and pepper to taste. then drizzle balsamic glaze if desired.
