4 c fresh blueberries
2 c granulated sugar
zest of 1 lemon
1 tbs lemon juice
2 tsp vanilla extract
Instructions
Rinse the fresh blueberries thoroughly and remove any stems or leaves. Pat them dry gently.
In a large saucepan, combine the blueberries, granulated sugar, lemon zest, and lemon juice. Mix well to ensure all the flavors are combined.
On medium heat and bring the blueberry mixture to a simmer. Stir occasionally to prevent sticking or burning.
Reduce the heat to low and continue cooking the blueberry mixture for about 20-25 minutes. Stir occasionally to avoid burning. The mixture will thicken as it cooks, and the blueberries will soften and break down, creating a jam-like consistency.
Remove the saucepan from the heat and stir in the vanilla extract.
Allow the blueberry jam to cool completely before transferring it to clean, sterilized jars. Once cooled, seal the jars tightly and store them in the refrigerator.
