This buffalo mac and cheese recipe takes comfort food to new heights. The velvety cheese sauce infused with tangy buffalo sauce creates a sensational combination that is sure to please. Ingredients

1 box pasta

3 tbs butter

3 tbs all-purpose flour

2 c milk

2 c shredded gouda cheese

1 c shredded cheddar cheese

1/2 c buffalo sauce

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

1/2 c chopped green onions


Instructions


Cook the pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet or saucepan, melt the butter over medium heat. Add the flour and whisk constantly for about 1-2 minutes to make a roux.

Gradually pour in the milk while whisking continuously to avoid lumps. Keep whisking until the mixture thickens and comes to a simmer.


Reduce the heat to low and add the shredded gouda and cheddar cheeses, stirring until melted and smooth. The combination of gouda and cheddar provides a rich and creamy base for the macaroni and cheese.


Stir in the buffalo sauce, garlic powder, onion powder, salt, and pepper. Combine macaroni to the sauce, stirring until well-coated and heated through. Cook for an additional 2-3 minutes to allow the flavors to meld together.


Remove from heat and let the macaroni and cheese rest for a couple of minutes to allow the sauce to thicken slightly.


Serve the buffalo macaroni and cheese hot, topped with chopped green onions.
