Ingredients

8 oz block of feta cheese
1/4 cup to 1 cup vegetable broth (depending on desired thickness)
2-3 roasted garlic cloves
1 tbsp lemon juice

Instructions
1. Make the Whipped Feta
Blend: Crumble the feta into a food processor. Add roasted garlic and lemon juice.
Add broth: Start with 1/4 cup vegetable broth and blend until smooth. Gradually add more broth (up to 1 cup) to reach your preferred consistency.
Season: Adjust with salt and pepper to taste. Set aside.
2. Roast the Carrots
Preheat: Heat the oven to 400°F.
Toss: In a bowl, toss the carrots with olive oil, za’atar, salt, and pepper until evenly coated.
Roast: Spread the carrots in a single layer on a baking sheet. Roast for 20-25 minutes until tender and slightly caramelized.
3. Assemble the Dish
Spread the whipped feta: On a serving plate, spread a generous layer of whipped feta.
